GREENVILLE COUNTY, S.C. -- Ten Greenville County Schools are trading tater tots for tofu and french fries for fresh veggies. Lunch menus are being overhauled to include more raw foods and fewer processed items.
To get ready for the change, 300 cafeteria works are getting culinary training this summer. The school district is partnering with the Culinary Institute at Greenville Tech.
"The chefs are great. They are teaching us all sorts of things and are really patient with us," said cafeteria worker Kim Kelley.
The crew of lunch ladies is learning to make fancy salads and salad dressing, homemade soups, whole- grain pastas, black bean burgers and tofu.
"When you have a 4-year-old eating tofu and asking for more, this is huge!" said Greenville County School Nutritionist Jennifer Sharp.
